EASY BREAKFAST FRITTATA FOR SENIOR WOMEN

Easy Recipe for Breakfast

We just had the best breakfast frittata I prepared in a long time!  As we age, we tend to look forward to good meals, and breakfast is the most important meal of the day. We seniors need to keep the food pyramid in mind as we prepare meals in order to get the best nutritional value from what we eat.  And it’s kind of hard to include veggies in the typical cereal and milk breakfast.

So think about the kind of veggies your and your partner like to eat.  I found onion and garlic in my veggie bowl this morning.  Also had some organic red and orange peppers, and some shiitake mushrooms in the refrigerator.  A zucchini topped off the veggies I added to the frittata.  These dishes are easy to prepare, don’t take much time, and can be a help getting your refrigerator cleaned out. Although mine were fresh, they don’t always have to be, because they are sauteed.  You can get away with veggies that are a few days old.

Here’s what I did.  Be sure to change up whatever you and your partner don’t particularly like.  Recipes need to be altered for your unique taste buds!  This dish also works for a light evening meal.

  • Use a 9 inch fry pan;
  • Chop garlic and onion into small pieces… about 1/3 cup each
  • Chop red and orange peppers into small pieces… about 1/4 cup each
  • Sauté garlic, onion and peppers in about 1T of cocoanut oil until they are al denté;
  • Add one zucchini, cut into small pieces and cook about 2 minutes;
  • Add 1/4 cup chopped shiitake mushrooms and cook another 2 minutes;
  • Whip 5 eggs with a wire whip until mixed well; add to veggies and stir while it cooks
  • Season with your favorite seasonings; mine include Herbs from Provence (Morton & Bassett, San Francisco), Spicy Italian Herb Seasoning (in grinder-Kroger Private Selection), and sea salt.

Serve the frittata on a plate, garnished with Cilantro.  A breakfast roll and Clementine orange can be added to round off the meal.  Enjoy!
