Chicken Marinade Recipe for Senior Women

Chicken marinade was something I’d never used until someone told me that I needed to try this one.  She said to me that if I would try it, I’d never grill or even bake chicken without first marinating in this sauce.  It seasons as well as tenderizes the chicken. 
A few years ago, my husband and I frequently invited couples to our home for potluck dinners.  I always prepared the meat dish and our friends brought some of their best dishes.  It sometimes tasted and looked as though we were making gourmet meals.  We shared recipes and enjoyed delicious meals together and no one  person did all the preparation.  It was a wonderful time of our lives.  I enjoyed setting a lovely table, getting out some of our china and silverware that we did not regularly use.  
Many lively, interesting conversations happened around the table.  One friend mentioned that he had made a list of 100 things he wanted to do before he died.  That sparked my husband into making his own list.  Another evening we started sharing those activities that we’d always dreamed of doing…one friend said that he’d always dreamed of having his own dump truck,  my husband had always dreamed of owning  a hardware store, just so he could play with all the stuff in it.  I saw the little boy in him that evening.
We frequently grilled chicken for this meal and I learned that buying chicken tenders provided more reasonable portions of the meat.  I always marinated the chicken tenders before grilling with this delicious marinade.  It actually belongs in my ‘best ever’ file.

CHICKEN MARINADE
1 small can pineapple juice  (6 oz)
1/2 cup oil
1/2 cup soy sauce
1/2 lemon juiced
pepper
Mix well together.  Pour over the chicken pieces and marinate no more than 1 hour.  Remove and grill or bake.
