The Best Turkey Wild Rice Soup Ever!

In my opinion, one of the best things about Thanksgiving dinner was the leftover turkey.  And the best thing about leftover turkey was the Best Turkey Wild Rice Soup Ever that it went into.  This is such a grand way to use some of that left over turkey,  gravy and/or broth that you don’t want to end up throwing away.  Thanksgiving is past but Christmas dinner is ahead of us…perhaps there will be another turkey in the near future.  I’ve often regretted that Thanksgiving dinner and Christmas dinner were so close together…I seemed to want to serve turkey at both, then I was so turkeyed out that I couldn’t even talk about it for another year.  Here is one of my favorite recipes for turkey past. 

1 large onion, chopped
3 stalks of celery, chopped
2 or 3 shredded carrots
3 kale leaves, center stem removed, and leaves chopped (more if you really love kale)
4 cloves garlic, chopped
1/2 tsp curry powder
1/2 tsp thyme
2 tbsp parsley flakes
1 bay leaf
1 cup wild rice blend (wild, brown and white) or 1 cup any rice
4 quarts chicken broth or 4 qts water plus 3 tbsp chicken flavored soup base (or to taste)
3 or 4 cups of chopped cooked turkey or as much as you have!

Saute onion and celery.  When the onion is starting to look clear, add shredded carrots, chopped kale and chopped garlic pieces.  I double or triple the usual amount of garlic because of all its health benefits and it tastes so good.  Add curry powder, thyme,  parsley flakes and bay leaf..  Let the seasonings blend together for a good minute, then add either chicken broth, or water plus chicken flavored soup base.  Add wild rice blend and turkey.   Simmer about 1 hour or till the rice is done.  Do not boil.  Remove the bay leaf.  Serve and enjoy.
